  • Tofu...

    Since no one had a Tofu recipe of their own to suggest, I''ll share the recipe that I cooked tonight.

    It was really good.

    2 large field mushrooms
    1/2 a packet of marinated tofu cubes (honey, soy and garlic)
    1 tbsp Mirin
    2 tbsp Soy sauce (I use low salt because I'm meant to be on a low salt diet)
    1 knob of fresh ginger (grated)
    a knob of salt-free butter
    Sesame oil

    Slice the field mushrooms and fry them in a knob of butter over a low heat until cooked.

    Add the tofu cubes and increase the heat slightly until the tofu is heated and both the tofu and mushrooms are starting to brown.

    Add the mirin and soy sauce and heat until the sauce thickens and goes a bit sticky.

    Throw in the ginger and turn the heat off. Give it a stir and pop the lid on for a few minutes. (I had to do this because the steak wasn't cooked yet. I'm not sure it actually added to the recipe!)

    I served the mushrooms and tofu with steak and on the side I served red capsicum that I'd sliced finely, carrots and bok choy that I'd added to the pan with the steak. 

    Once everything was on the plate I splashed a few small dots of pure sesame oil over the mushrooms, tofu and veges.

    It was really, really yummy.

  • what?

    I'm surprised that non of you have a tofu recipe that you use!

    Does no one eat tofu?

    I did get some nice marinated tofu pieces which I just added to a stir-fry, I thought it was pretty tasty.

    I've got some plain 'silky tofu' that I think I'll try and find a really special recipe for.

    I saw Kylie Kwong an Australian Celebrity Chef cooking tofu of TV not so long ago, I might google about and see what she has...

    On a side note, Kylie Kwong some pretty funky jewelery on her show, I wonder if she'd like the stuff I make.

  • Blood...

    I've been feeling really, really tired since the miscarriage, the doctor said that I had 3 reasons for feeling tired, the blood loss, the general anesthetic, and the fact I went back to work on Tuesday, which she felt was too early. (But the doctor at the hospital only gave me a medical certificate for Monday.)

    She sent me for a blood screen, and my blood counts say I lost the equivalent of 4 pints of blood.  The 'normal' range is from 20 - 350. Mine was 22 (down from 190-something when I last donated blood) if it had of dipped below 20 I would require a blood transfusion.

    So now I am severely anemic... *sigh* I am to take iron supplements and eat a diet that is high in both iron and B12 for at least 4wks.

    I googled diets for high in iron and B12, and discovered that Japanese food tends to be high in both, Miso, Tofu and seaweed are all good.

    Good thing I like Miso soup!

    So, I brought two types of Tofu, but I couldn't find Miso paste at my local supermarket... anyone got a good Tofu recipe? (one that doesn't require Miso paste.)

  • I never knew how hard it was...

    ... for people who have lost a baby (and I'm sure for people who are struggling to get pregnant) to go to the mall.

    Yesterday, Ross, TK and I went out as a family to celebrate Ross' birthday. We decided to go and see a light, funny movie ('Get Smart') to take our minds off the sadness we've been feeling.

    At the mall there where all these beautiful little babies in prams, little girls dancing about and singing... stores packed with the cutest little outfits... I can't tell you how many times my eyes teared up.

    I've got an appointment this afternoon with my acupuncturist who I am sure will be able to help me with the grief.

  • TK...

    ... is thrilled that he's going to be a big brother...

    (as long as he doesn't have to share his bedroom.)

  • I've got a secret and I'm not telling...

    ... insert evil laugh here.

    It's a really good secret.

    In other news, TK has been on school holidays for the past two weeks, and he's come down with a really bad cough in the past few days, if it's as bad as it was today, I can't send him to school with it tomorrow. How bad does that suck?

    Although, not as much as being sick on your school holidays I guess. :)

    Ross has told me off for not blogging. So this is me blogging. I've got not very much to say.

    I haven't been out to the garage to make beads for the past couple of weeks, it's been way to cold, but I'm getting the itch. There is a show coming up in Sydney that I'm planning on putting my stuff in.

    I'm also planning on painting a feature wall in the living room and sorting out some paintings to have framed to hang (on it).

  • International dinner...

    Last night my department had an international dinner at my bosses house.

    (such a nice house, and a really great layout for having parties!)

    Due to the diverse nature of our work group, there was food there from all around the globe, Australia, Eastern Europe, Sri Lanka, India, New Zealand, South Africa, Greece, Iran and Afghanistan (I think that was everyone!).

    The food was delicious And we all ate too much.

    Some of my favourite foods on the night came from Iran and Afghanistan ... *drool*

    I've been listening to an audiobook called 'Funny in Farsi' which is about the life of an Iranian woman who grew up in the USA. I've really enjoyed the book and each day I go in and talk about what I've heard on the book, so it was really nice to taste the food that that book talks about.

    And it tasted good too. Really good!

    You should see what is in the Farmers Direct Fruit and Vege box this week. I am so happy with it!

    And everything looks amazing, if TK hadn't half unpacked the box before I got to it, I would have taken a photo.

    In the week I have had the exercise machine I have exercised 5 times, each time for approx 20mins, which is how long it takes me to cover 2kms.

    My diet has been really good, all fresh fruit and veges, no chocolate, no crap food, everything home made....

    AND YET I HAVEN'T LOST A THING!

    *pout*

    I know, I know it's not all about weight, but I'd like to have lost something.
